Method

  • Pickle the cucumbers. In a small bowl, mix the vinegar, sugar and salt. Stir in the cucumber slices and, if desired, the chilli. Allow to season for 30 minutes.  

  • Slice the red cabbage, for example with a cheese grater. Season your mayonnaise with soya bean paste. (If using chilli paste, mix in 1 tablespoon of sesame seeds for extra flavour if you wish.)  

  • Heat up the HK Nordic Oatballs and bread buns.  

  • Fill the buns with red cabbage, swirls, cucumber and mayonnaise. Sprinkle with sesame seeds and chilli flakes if desired. 

Tip

  • You can make a broth for the red cabbage similar to that used for the cucumber and leave it to soften in the broth for an hour. Or use sauerkraut made from red cabbage.
