Beat the eggs and cream in a bowl. Season with salt.

Heat a frying pan over low heat and add 1 tablespoon of butter. When the butter has melted, add the egg mass to the pan.

Stir the mixture in the pan with a wooden spatula or an arrow until it reaches the bottom. When the mixture starts to coagulate, remove the pan from the heat and stir in 1 tablespoon of butter. Season with ground black pepper.

Keep the scrambled eggs warm, for example under a lid. The scrambled eggs should be creamy soft and slightly loose.

Fry the bacon slices in a hot pan until crispy and set aside to wait.

Fry the brioche in a pan with a small amount of rapeseed oil until hot. Fill the brioche with bacon and scrambled eggs. Finish the bacon and scrambled egg brioche with chives and enjoy.
