Slice the red onion into thick slices and grill the slices on a hot grill on both sides until the onion starts to soften.

Slice the tomatoes and place the slices on a flat dish. Drizzle with red wine vinegar and olive oil and season with salt and ground black pepper. Stir in the grilled red onion slices and season to taste.

Mix all the ingredients for the saffron mayo and place in the fridge to season.

Grill the sausages over medium heat, turning occasionally, for about 8 minutes, until nicely coloured and cooked through.

Serve the grilled HK Carlos Sausages with a roasted red onion and tomato salad and saffron aioli.
