Melt the butter in a bowl or saucepan. Add the wheat flour to the pan and fry, stirring all the time with a spatula, until the flour turns dark brown. This is a job where patience is of the essence.

Once the flour has darkened, pour in the meat broth, stirring vigorously all the time. Bring the sauce to the boil, stirring occasionally.

Allow to simmer/thaw gently for about 15 minutes. Season with ground black pepper and salt, if necessary.

Serve with mashed potatoes, candied lingonberries and pickled cucumber as a side dish.
