Chop the kimchi into smaller pieces if needed. If you like, add coarsely grated carrot or daikon radish for freshness. Place the kimchi in a serving bowl.

Season the mayonnaise with chili paste. Korean gochujang is strong, so start with a small amount.

Separate the lettuce leaves, rinse them, and place on a serving platter. Finely chop the cilantro into a small bowl, and add chili if you want extra heat.

Heat the Oatballs and place them on the table with the other ingredients.

Each diner assembles their own ssam: a lettuce leaf with kimchi, Oatballs, mayo, and cilantro. Wrap it up and enjoy!

You can mellow the flavor of kimchi by mixing it with sauerkraut, or use a ready-made sauerkraut-kimchi mix.
