Method

  • Start by breaking the eggs into a bowl, add a splash of milk and mix well. Set aside.

  • Chop the sausages, onion and garlic. Heat a pan and fry on a medium heat for about 5-7 minutes. Add the spices and taste.  

  • Meanwhile, chop the cherry tomatoes into 4 pieces and finely chop the chives.  

  • When the sausages are nicely browned, add a splash of oil and pour a well-mixed egg mixture into the pan, so that the sausages and onions are nicely coated on all sides of the pan.  

  • Place the chives and tomatoes on top, seed side up. Transfer to the oven and bake in a convection oven at 220°C for about 12 minutes.

  • Transfer to a plate and garnish with more chives. Enjoy!
